1/2 pound ground beef-about two fistfuls
1 onion, chopped
1 small can diced green chilies
1 can diced tomatoes, undrained
2 cans tomato juice or 1 can tomato juice and 1 cup beef broth
1 can black beans or kidney beans
1 can sliced olives
1 cup corn
1 package of taco seasoning
1. Defrost ground beef and chop the onion.
2. In large pot, cook ground beef and onion on medium heat. Cook until beef is no longer pink and onion is clear.
3. Add tomatoes, tomato juice, chilies, beans, corn, olives and taco seasoning.
4. Simmer 20 minutes.
5. Serve in bowls topped with grated cheese, sour cream and corn chips.
