Ingredients: (Serves 6)
- 1 stick (4 ounces) butter, melted
- 1 cup plus 3 tablespoons granulated sugar, divided
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup milk
- 1 teaspoon vanilla extract
- 3 to 4 ripe peaches, peeled, pitted, thinly sliced
- 1/2 teaspoon cinnamon
Prepare Dutch Oven:
Light 35 pieces of charcoal in a barbeque capable of holding a dutch oven.
Rub the inside of the dutch oven with cooking oil.
Place the dutch oven in the barbeque to heat it up, with 20 pieces of charcoal underneath it and 8 on top of it.
Prepare Batter and Peaches:
In a mixing bowl, combine 1 cup of the sugar, the flour, baking powder, and salt; stir to blend. Stir in the milk and vanilla until blended.
Toss the peaches with the remaining 3 tablespoons of sugar and 1/2 teaspoon of cinnamon.
Cook the Cobbler:
When the oven is hot, pour peaches into the oven.
Add the mixture on top of the peaches.
Spread several slices of butter on top, and then sprinkle on cinnamon.
Put the lid back on the oven and bake for 40 minutes.
Check the cakey part with a clean straw or knife. If the straw comes out clean, the cobbler is done. If not, put some more charcoal on the oven and bake 10 more minutes. Then check it again.
Serve cobbler in bowls. Let cool for a bit, then top with ice cream.
